I love using my slow cooker, especially if I’m cooking something that really benefits from long slow cooking times. This recipe for chicken chili is perfect to take advantage of the benefits of slow cooker cooking. What’s different about this chili from most chicken chili is the addition of a surprise ingredient, cream cheese. Yum. I mean, really, yum.

This recipe is perfect for a crowd, but it’s also good for the next couple of days stored in the refrigerator, and you can freeze what you don’t use. Take lunch to work anyone? I always use 1/3 less fat cream cheese, but feel free to use whatever cream cheese appeals to you.

  1. Put chicken breasts in slow cooker. Add all ingredients through chili powder. Stir to combine. Add cream cheese, but do not stir,
  2. Cook on low 6-8 hours high for 4 hours.
  3. About a 1/2 hour before serving shred chicken with two forks. Stir cream cheese into chili.
Recipe Notes

Make your own buttermilk ranch dressing mix. Use 2 tablespoons in place of the packaged mix.
