I like to buy my salmon at Costco, it comes as a filet that is around 3 lbs. I always had trouble portioning it in preparation for freezing. Then, I watched this video, from the blog Savage_Kitchen, by Chef Savage from The Cliff House at Pikes Peak – amazing. The first time I tried it, the portions were between 5.25 oz & 6.4 oz.  I used the scraps in a pasta dish, so none of the salmon went to waste.
